Here’s why you should eat more eggs

Eggs yolks and the white contain more than fifteen different vitamins and minerals, including double digit percentages of the daily value for important energy vitamins such as riboflavin (vitamin B2) and vitamin B12, not to mention some of the highest quality protein on the planet.  And that’s a great recipe for energy. Eggs are a viable source of vitamin D and ‘heme’ iron, the most absorbable from of iron.

The yolk is a rich source of an essential nutrient called choline which is usually thought of as a member of the B vitamin family.  Choline is needed for the syntheses of acetylcholine which is one of the major neurotransmitters in the body.  That means it helps transmit information in the brain and is absolutely critical for memory and thought.  Having adequate levels of acetylcholine also helps protect against dementia.

Two ingredients in egg yolks choline and phosphatidylcholine help the liver get rid of the kinds of toxins that can drain your energy. Remember that the liver is ground zero for cleansing, and the more help you can give it, the better off you’ll be. With the number of energy zapping toxins we’re exposed to on a daily basis, your liver can use all the help it can get.  Eggs – complete with the nutritious yolk – can help.  Eggs are truly an energy super food.

In November 2007, Mother Earth News published the results from their second egg-testing project, showing that compared to official U.S. Department of Agriculture (USDA) nutrient data for commercial eggs, eggs from hens raised on pasture contained:

  • 1⁄3 less cholesterol
  • 1⁄4 less saturated fat
  • 2⁄3 more vitamin A
  • 2 times more omega-3 fatty acids
  • 3 times more vitamin E
  • 7 times more beta carotene

Purchasing eggs from conventionally raised chickens are higher in Omega 6′s and 2-3 eggs per week is the recommendation.  Free range eggs from chickens who are allowed to scratch,  roam freely and eat green grasses, weeds and seeds give you the perfect balance of Omega 3′s and will keep the cholesterol circulating in the blood and prevent it from depositing in the arteries. Eggs are a valuable food, providing excellent protein, vitamins and minerals.   You have permission to eat and enjoy free range eggs daily.
